Grilling vs. Barbecue-ing
There’s no doubt that built in gas grills offer some extraordinary features that will help you to master the art of cooking. You’ll certainly be the envy of the neighborhood, and the opportunities for outdoor parties just got much more interesting. You’ll want to start experimenting right away, and as the results get more and more precise, the more you’ll want to keep trying new things. There’s no end to the combination of flavors and textures, and like anything worth learning, there’s always more to know.
There are lots of grilling techniques and hints that you already know, and many more that you’ll come across. It’s worth investigating all the differing opinions on the best way to do things, with certain cuts of meat and certain types of preparation. One of the outdoor kitchen topics that often brings up a lot of interesting contention is the issue of barbecue-ing vs. grilling. There are some who say that there isn’t a big difference, but really, there is, and it’s pretty simple. Grilling means preparing cuts of meat by cooking on high heat, directly, for short periods. Barbecue (or barbeque, or bb-q, etc.) means slow cooking over indirect heat, where the fire passes through wood. Wood has to be involved somewhere, or it’s not barbecue, because it refers to the taste in the smoke.
With this said, it’s certainly possible to escape the debate between barbecue and grill and slow cook meat on your grill, and give it a taste that is very similar to barbecue. Your grill is extremely versatile, and a barbecue by definition is not. The best barbecue, after all, is a hole in the ground that’s dug for one occasion. There are ways of flavoring meat while it’s cooking that can give you the taste you’re looking for, and ways of experimenting with these tastes. The easiest way, of course, being to simply add barbecue sauce. If that’s the rather obvious technique, then be sure to add the sauce at the very end, since sugar tends to burn. However you cook it, though, you’ll soon find yourself enjoying the preparation as much as the consumption.
